
This is my second year hosting Thanksgiving at my house, which means once again I have a TON of leftovers.
I found and used this soup recipe last year, it was a huge hit at my house,and I am getting ready to use it again.
So, if you are looking for something to do with all of those leftovers try this out.
Turkey and Dumpling soup
2 onions
1 clove garlic
Squash of choice ( butternut works perfectly)
chicken Stock ( enough to fill 3/4 of your soup pot)
Leftover turkey
Leftover Stuffing
2 eggs
chop onion and garlic and squash ( make sure to cut all skin off squash) and saute in butter until onions are soft.
In a large pot add chicken stock ,leftover turkey, and salt and pepper. simmer on medium heat. Add Sauteed onions garlic and squash, let simmer
In a medium size bowl combine leftover stuffing with two eggs. form into Balls and Drop into soup. Bring to a boil and then lower to a simmer.
Keep on low until ready to eat, add more salt and pepper to taste as needed.
